Veggie Burger Recipe
Here is what you need :
1 cup Quinoa, uncooked
1/2 cup Whole Wheat Flour
1 Medium Onion, chopped
1 Carrot, grated
1/2 Courgette, grated
1/2 small Broccoli, grated
1 small Garlic clove, chopped
A pinch of cumin
A pinch of curcuma
2 tablespoons olive oil
Rocket leaves, tomato slices and pieces of avocado to garnish

Pour the quinoa into a colander and rinse several times with water. Tip the quinoa into a saucepan, add 2 cups of water, bring to the boil then simmer for 10 to 15 minutes or until the little spiral germs have separated from the kernels. Let it stand for 5 minutes with a lid on. Then open the lid and let it cool. Put the cooked quinoa it in a large bowl, add the flour, egg, grated vegetables, garlic, spices, salt and olive oil and mix everything well; if necessary put a little more flour to bind all the ingredients together.
Note: if you prefer the vegetables to be softer and less crunchy, you can stir-fry them lightly before mixing all the ingredients.
Shape the mixture in and heat up a frying pan, add a little olive oil then fry the patties for 3 to 4 minutes on each side.
Place a patty on a plate, add layers of rocket leaves, tomato slices and avocado, then repeat with the other patties. Ready!
